Maple Glazed Duck Breast
with cream cheese mashed potatoes
Ingredients:

4 duck breasts

1/4 cup maple syrup

1/2 teaspoon cayenne pepper
-
salt
-
pepper

oven-safe skillet
Directions:

Preheat oven to 400° F.

Score the duck fat, don't cut into the meat. Season the
duck breasts on the meat side, with salt and pepper. -
Place skillet on the stovetop, do not preheat. Place the duck
breasts fat side down in the skillet, cook for 5 minutes on medium heat (or until fat is lightly browned). -
Turn duck breasts fat side up and cook for another 5 minutes on medium heat.

Turn duck breasts back to fat side down and place in the oven.

Bake in the oven for 10 minutes.

While the duck breasts are in the oven, mix up the maple syrup and cayenne pepper.

After 10 minutes, remove breasts from oven, turn them over (fat side up), use half of the maple glaze and baste the breasts, returning them to the oven for 15 minutes.

Remove breasts from the oven and check internal temp. Duck should be cooked to 165° for rare and 180° for well done.

Once the breasts are the desired temperature, baste them with the remaining maple glaze and let the breasts set for 5 minutes.

Slice the duck, long way, and plate up. Serving immediately with your favorite side dish.
