Taco Casserole
Easy casserole to throw together. Make it your own, adding your
own favorite ingredients! **low FODMAP option
Ingredients:

Corn/Tortilla Chips, crushed but not crumbs
(be sure they're gluten free) -
1 lb organic ground turkey/ground beef/beyond meat

1 package of Taco Seasoning (use low FODMAP**
seasoning - no onion or garlic) -
1 jar (16 oz.) salsa verde
(use FODY brand for low FODMAP**) -
1 can black beans (rinsed) **no beans for low FODMAP

1/2 onion, diced **spring onion TOPS for low FODMAP

1 to 1 1/2 cups shredded cheese* (use Follow Your Heart,
Daiya or Violife for dairy free)
Directions:
1. Preheat oven to 350 degrees.
2. Brown ground meat (turkey, beef, or chicken), then drain. Stir in taco seasoning.
3. In an 8X8 or 9X9 oven safe pan place a layer of crushed chips, then a layer of ground meat, then a layer of beans, then a layer of salsa verde, sprinkle some onions and then shredded cheese, repeat this one more time.
4. Bake the casserole until warmed throughout, about 20 to 30 minutes.
